Great for hikes, rides, soccer game snacks--you name it! –Veena
Here's what I love about our Ayurvedic Trail Mix--it's high protein, low glycemic, I can tailor to the season and the partakers. It stores and travels well so it's a great way to avoid eating things we don't really want, but get in a pinch. I love this on long bike rides and hikes with the dogs.
Ingredients:
2 cups roasted pumpkin seeds
1 cup roasted slivered almonds
1 cup roasted sunflower seeds
1 cup dried cherries (low glycemic fruit)
3-4 tablespoons maple syrup or appropriate sweetener
1 pinch Himalayan salt or Red Alaea Hawaiian salt (rich in minerals)
¼ cup toasted coconut flakes (optional, nice addition for Pitta and strong appetites)
Tailor this recipe so it is balancing for your doshic picture. Reduce ama (toxins) and balance your agni (digestive fire) by eating according to your dosha.
Directions:
1. Preheat oven to 300 degrees
2. Mix seeds, nuts and maple syrup together, hold cherries aside
3. Line 2 cookie sheets with parchment paper
4. Spread nut/seed mixture thinly on cookie sheets and sprinkle with a bit of salt
5. Bake for 20 minutes, watching closely
6. Let nut/seed mixture cool well
7. Peel the mixture off the parchment paper (will look like granola/brittle texture)
8. Now add dried cherries, store in glass container.
