Bowl of Ayurvedic Turmeric Lentil Soup with Coconut Milk

Ingredients:


  • 1 cup red lentils (or lentil of your choice)

  • 4 cups vegetable broth

  • 1 can (14 oz) coconut milk

  • 1 onion, chopped

  • 2 -3 cloves of garlic, minced

  • 1-inch piece of fresh ginger, grated

  • 1-2 teaspoons turmeric powder

  • 1-2 teaspoons cumin

  • 1-2 teaspoons coriander

  • 1 tablespoon coconut oil

  • Salt and pepper to taste

  • Fresh cilantro for garnish


Instructions:


  • Prepare the Lentils: Rinse the red lentils under cold water until the water runs clear. In a pot, combine the lentils with vegetable broth and bring to a boil. Reduce heat and let it simmer for 20-25 minutes until the lentils are tender.

  • Sauté the Aromatics: In a separate pan, heat coconut oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onion is translucent.

  • Add Spices: Stir in turmeric, cumin, and coriander. Let the spices toast for a minute to enhance their flavors.

  • Combine Ingredients: Add the sauteed mixture to the pot of cooked lentils. Pour in coconut milk and stir well to combine all ingredients.

  • Simmer and Season: Let the soup simmer for an additional 10-15 minutes to allow the flavors to meld. Season with salt and pepper according to your taste preference.

  • Serve and Garnish: Ladle the fragrant soup into bowls. Garnish with fresh cilantro for a burst of freshness and color.
